This was so quick and easy to make and along with a salad made a delicious meal.

Pastrami Hash
Ingredients:
4 medium Yukon Gold potatoes cut into bite size pieces
1 ½ cups onion thinly sliced
1 medium sweet red pepper chopped
½ pound turkey pastrami coarsely chopped
½ cup scallions chopped
1 tsp table salt
1 tsp black pepper
½ tsp thyme
1 Tbsp olive oil

Directions:
Preheat oven to 450
Coat a 9X13 inch pan with cooking spray
Set a medium pan of water to boil over high heat
Parboil potatoes just until fork tender (5 minutes)
Combine potatoes, onions, pepper, pastrami, scallions, salt, black pepper and thyme in prepared dish; toss with oil
Bake for about 30 to 45 minutes
Serves 4 (¾ cup per serving)

  1. Joan, your recipe sounds delish! How was it? ;o) The card of course is up to your usual AWESOME Joan standards. I love the distress inks with theat light blue and those penants are perfect!
